Ah neat, I don’t know specifically what galangal tastes like but I buy these pucks of Massaman Curry and a couple others from a Thai lady in town and those Thai folks make amazing Curry. That would’ve been good too but I honestly think you’re missing out with no coconut milk, which I don’t have.
Well coconut milk, though generally coconut water, is more common in Southern and tropical cooking. I’ve always been a Northerner in my approach to things: So, root vegetables, heavy spices, and delicately pickled veg are king. Oh, and half a cow, lamb, or goat.
A whole leg of lamb is slowly roasting in the oven, though I just got back from my local Muslim shop. So, I now have my favourite dates for my cheeseboard: Medina and Sagai Shahi dates - you get fussy about dates, if you’ve lived in Saudi.
Obviously, the Medina dates are in the much smaller box on the left.
I love dates, for how sweet they are they’re allegedly good for regulating blood sugar
That may partially be due to the fact that those who tend to eat dates a lot also engage in regular fasting.
Well, the meat industry only tends to get into farming insects in order to provide enriched food for animals. It would be nice to see increased production as mealworm/ cricket flour would be much more viable than the ultra processed vegan crap people have been prompting for years - they are more processed than preservative laden snacks and are utterly unhealthy.
Although, I have a Guangdong attitude to food: eat everything and try all twice.

As it’s a vegetarian day, I’ll have a broccoli and sweating aged stilton soup.
Hmmm, missing a perfect opportunity for mutton.
I am having goat tonight. Oddly, you need to go to the butcher’s to get it in the UK.
As such, most miss out on beautifully gamey meat, especially if it is slow cooked tangier.
Non MRNA injected pork sausage for breakfast, free run eggs and sourdough toasted with butter… Salt and Pepper on a sunny side up egg and yellow mustard… Make a sandwich and eat it over a plate.

Bought myself thai chillies too, so to switch it up for a day I’m eating 2 meals and it’s going to be Pad Khee Mao, a thai stir fry with noodles
Buffalo burgers, sunny side up eggs, cheddar, pickles, onion and mustard on a poorly cut cheddar kaiser roll.
Peppers onions and garlic, grass fed beef and a simply Thai stir fry sauce minus the oyster because it was out of stock
