I learned why my new All-Clad Stainless pans were sticking food. I wasn’t pre-heating them thoroughly. Wow, what a difference! Omelette flipped like buttah this mornin’.

That’s a beautiful omelette and you know how to use a Stainless pan, I tossed all my non stick stuff and am only on iron and steel cookware. After you learn the temps, cooking is a breeze but sometimes if you’re impatient your food will stick.

These are amazing:

De Buyer Carbon Steel Pans… They come with a wax coating you have to scrub off and then you have to oil and season the thing to make them non stick, a lot of restaurants use them.

Very nice, Joel! I’ve wanted a good set of cookware for a long time. I’m also still getting acquainted with this new Induction range/cooktop I bought. Really like it though.

Lodge makes great Cast Iron stuff, that’s what my dutch oven is… Affordable too for something that’ll last a life time… Super heavy stuff though to move.

Wife asked me to make one, I literally only had 130g of flour and that was self raising which isn’t ideal, also had no cream so I rustled up what I could! Just used the self raising anyway for the pastry which was just enough. Had four very thick rashers of bacon which had been left (would of ended up being thrown) because quite a bit of fat but trimmed up and cut into small pieces, then fried and placed in the pre-cooked pastry case. No cream so made a seasoned milk, egg and cheese mix. Also had just one lonely tomato in the fridge which possibly would of just stayed there until needing to throw so two thirds through cooking the quiche added the tomato sliced on top!

This got alot of use, at one time. Bought it at LL Bean store, just about 25yrs. ago.

A quiche is one of my favourites so easy to make, most of the time I’m lazy and use puff pastry for the base.
Ham is better than bacon in them because it floats in the egg a bit where as the bacon sinks.
