Speaking of sweeteners, one thing I use in most of my creams and custards and dairy forward recipes is FLV Sweetness. With it not having any citric acid in it unlike Cap SS, it seems to really just sweeten the creams and custards with out adding that slight chemical note.

I have had many arguments about Sweetness. I think it is great for adding a sweet note to any dessert liquid, but others want that over sweet note you get from CAP SS

And that is totally fair for sure, it all comes down to the individuals personal preference.

Same here. I think in the beginning I not only over-flavored, but over-sweetened too. Probably trying to capture what I thought I was getting from commercial juice. I try to keep them in check now, but every once in a while, I have to experiment with multiple sweeteners (for sweet/er juices), as they can impact juices differently. Like adding 0.25 CAP SS, and 0.5 TPA Sweetener or Cotton Candy. The Suc can boost or enhance some, but EM or M (Maltol) can enhance others.

Hi All,
You folks have been on my wavelength with an Ultimate Custard and with at least one vote on including a cheesecake, I thought I wanted to revive this request, especially since one of the mentions was for TPA Cheesecake (Graham Crust). From my original post, I’d mentioned the graham note that I’d tasted in Milkman Vanilla Custard that I’ve been trying to replicate, but I’m “home schooled” and not a professional mixologist. The graham note was subtle and only detectable in my Horizon Falcon sub-ohm tank with mesh coils. @OldGoat might not be aiming for graham notes, but I thought I’d throw out a pitch…

I want the best custard ever made. If that means we have to add Graham Crust, then that is what we do.

Cheesecake will help to give it that thick mouth feel. I think this is a great idea.

Cheesecake (Graham Crust) TFA is not a Cheesecake. It is the Graham base for a cheesecake. I would say we need to add a good, thick CheeseCake to the mix.

Average usage of 2.7% I’m guessing that’s for taste so somewhere around 1.5-2%?
