That’s looking like a solid winter warmer, Pauly — creamy, nutty, with that rich Sobucky vanilla bringing the backbone.
Couple thoughts:
1. Almond Custard (WF) @ 3%
This one is already quite full-flavoured and thick, so good call. If it starts tasting a bit dry, it might just be the almond note—easy to smooth out later if needed.
2. Classic Vanilla (SSA) @ 3%
Very clean, sweet vanilla. You could maybe drop this to 2–2.5% to let the almond and hazelnut breathe a bit more, unless you really want it vanilla-forward.
3. Condensed Milk (PUR) @ 2%
Perfect. That’ll round out the custard body nicely and add just enough sticky sweetness.
4. Creamy Hazelnut (FW) @ 2%
Lovely addition — brings warmth and depth. Just keep an eye that it doesn’t push too earthy/nutty when paired with the almond. If it does, try 1.5% next time and layer with something like a light marshmallow or cream.
5. Super Sweet (CAP)
I know it’s not in your stash, but this is one mix where a touch of sweetener really helps glue everything together. You could sub in Ethyl Maltol or Cotton Candy (10% EM) if you’ve got it — around 0.25–0.5% — or even a drop of Marshmallow (TFA or CAP) if you want to cheat some perceived sweetness.
Optional Enhancer (If You’ve Got It):
- Buttercream Frosting (WF or CAP) – even at 0.5%, it can give a nice frosted, creamy push without overpowering anything.
Looks like you’re close to a nice nutty dessert base — warm, rich, and comforting. Let us know how the steep goes! ![]()
