It might be a stupid question but what’s the difference between a Graham Cracker and a Graham Cracker Clear?
Same flavour the GC has some caramel colouring in it while the GC clear doesn’t

What’s best for a softer sweet pastry?
OOO pie crust is a good pastry a touch of cap sugar cookie will give you a sweeter note. If you are doing a fruit type pie FA apple pie has very little apple to it and a good pastry note.
And sorry to be a total pain but what about a flaky pastry other than a Danish?
I would roll with either wf or vta Croissant but both would probably need a biscuit (down low) to get you where you want to be. For me the WF is a little more realistic while the vta is a little heavier on the butter

Graham Cracker (Clear) does not.

Working on a good Ribena/Blackcurrent. I’m waiting on FLV and INW blackcurrent concentrates to come in, so temporarily I’m using a mix of Fa Blackcurrent, Forest Fruit and Flv Jammy berry. It’s pretty good but more berry than black current and it could be better. I have some FA Blackcurrent with Licorice coming over the pond from Chefs, but I figure thats 3 or 4 weeks away. That one sounded interesting. Most of their blackcurrent one shots were sold out, so they must be popular. What did make me sad, I found out NatureVape has a Vimto concentrate, but due to our outrageous regs he had to suspend sales to the US. Damn. He also sells a blackcurrant, raspberry and lime that sounded delicious too.
