Candy Bacon
Slather on maple syrup
Sprinkle on brown sugar and bbq rub
Run in the smoker at 275F for about 15 mins. Flip and repeat the coating on the other side. Contune smoking at 275 for about another 45 mins.
Smoked Pig Shots
Cut pre-cooked smoked sausage into discs. Wrap bacon to make a shot glass and secure with a toothpick.
Stuff with a mixture of cream cheese, sharp cheddar, crushed pineapple and brown sugar. Top with bbq rub and a little more pineapple. Cook in the smoker at 300F for about 1hr 20mins, or until bacon is rendered.
I got both these recipes from Hey Grill Hey. Doing the smoked salmon dip tomorrow as well. Gonna be the shit!

Anyone who ever decides to try the pig shots, let me tell you that they are incredible. However…plan them so they’re coming off the smoker right at the time you’re ready to chow down. They’re still good reheated, but nothing like they are fresh.
I’m not a huge fan of baby backs, as they seem to have less meat, and flavor than full St. Louis, BUT, due to SUPPLY CHAIN ISSUES (LOL), all they had in stock …

I only sparked up the grill today for poppers. However, I did make a Cowboy Crack dip, which was sinfully delicious.
@SthrnMixer thank you. I normally avoid baby backs like the plaque, but they turned out surprisingly great for some reason. The only #Fail was the insanely hot Jala I put in the muffins. A little too hot LOL.
