That looks awesome! I was actually looking at mixing something similar last week, called a hummingbird cake. I do a bit of baking this one is up for this week, bananas are nearly ripe enough to cook.
Your mix looks like this in some ways, great description of what the pineapple does in your notes! I was adding pineapple to carrot cake last week, it worked in a similar way and I liked the twist it added, easily see it working even better with banana.
