I recently signed up for emails from a small farm that raises cattle in my area, and wouldn’t you know they also have Osso Bucco! I’m IN!!
Cook it long and slow, mine will be in for 8 hours plus in the slow cooker. I’ve seen some recipes say a couple to a few on the stovetop buy you know…
So, you’re saying on grill, or in crockpot?
In the crockpot is my preferred, or the pressure cooker if I’m in a rush
I have a pressure cooker, but it’s a monster size. I wonder if it would work on smaller batches. Maybe time to haul it out of storage. Bought it years ago to make beef vegetable soup, etc. Worked really good!
Loads of sheep/beef farmers around here easy to pick em up direct from the farm for the same price that the supermarkets pay the farmers - yes the markup is that much
Kinda weird that lamb is not that common in the USA it is a great feed.
At that price I imagine you have to butcher it yourself?
Simon, it may very well be in the market, I just haven’t looked for it, nor do I know anyone who eat’s it. Chicken, and Beef are the staples over/up here!
Chicken, Pork and Beef is eaten much more than lamb in the UK but that’s simply because of the price, I know many people who Lamb is their favourite meat but they can rarely afford it!
Na it comes butchered and separated into cuts. If you have the customers there is a mobile butcher that will come to your farm and make it an ex-lamb and butcher it for you price per carcass will depend on how many you have for him to do.

Right now, where I live, New Zealand lamb chops are the same price as chicken. They really are great so now we’re eating it weekly.
My wife who grew up on a lot of wild meats says gamey. I grew up on a lot of goat so I don’t notice any ‘gamey’ ness at all with either.
Never tried local here, only NZ. But I gotta say I do drive by some farms with damn good looking sheep
We bought a mint plant to try and make our own this year. Can’t find the one that was appointment to HRH for the last few months.
When we make roasts or chops they’re rare medium rare. Rich taste and low fat. Similar to a filet. We do have a pressure cooker (or 2) but only grill our lamb.
